Place the honey, water and lemon juice in a small pan and bring to a steady simmer on medium heat while stirring.
Once the honey mixture begins to bubble, stop stirring and let the honey sit for 1–2 minutes until it deepens in color and releases a nutty aroma. That’s how you know it is caramelized.
Slowly pour and whisk in the milk until combined. Remove from heat.
Prepare espresso.
Combine the caramelized honey milk and espresso into your favorite cup.
Froth milk using your preferred method, and top with a drizzle of honey!
