POTATO BACON FRITTATA

WHAT YOU'LL NEED

  • 1 russet potato
  • Olive oil - as needed
  • Salt to taste
  • Black pepper to taste
  • 1 rosemary sprig
  • 1 medium onion
  • 4 strips of bacon
  • 8 eggs
  • 1/4 cup cream
  • 2 oz diced pepper jack cheese

How to Make

STEP ONE

Preheat oven to 350°F

STEP TWO

Peel the potato and cut into a 1⁄2” dice.

STEP THREE

Toss in olive oil, salt, pepper, and rosemary.

STEP FOUR

Bake for about 30 minutes or until the center is soft and outside crispy.

STEP FIVE

Slice onion into thin strips and over low heat caramelize.

STEP SIX

Bake the strips of bacon at until crispy. Chop once cooled.

STEP SEVEN

Combine the eggs and cream and whisk until homogeneous.

STEP EIGHT

In a 6” non-stick, oven safe sauté pan combine all the toppings and sauté in olive oil.

STEP NINE

Add the egg mixture and cook on the stove top until the outside edges solidify. Place in the oven and bake until the center is firm.

STEP TEN

Remove from the oven and invert onto a plate.
