    medium onion

    bacon strips

    eggs

    cup
    cream
  • 2
    oz
    diced Pepper Jack cheese
  • Salt to taste
  • Black pepper to taste
  • Olive oil, as needed

HOW TO MAKE

Potato Bacon Frittata​

    Preheat oven to 350°F.

  • 02

    Peel the potato and cut into a 1⁄2" dice.

  • 03

    Toss in olive oil, salt, pepper and rosemary.

  • 04

    Bake for 30 minutes or until the center is soft and outside crispy.

  • 05

    Slice onion into thin strips and caramelize over low heat.

  • 06

    Bake the strips of bacon until crispy. Chop once cooled.

  • 07

    Combine the eggs and cream and whisk until homogeneous.

  • 08

    In a 6" nonstick, oven-safe sauté pan, combine all the toppings and sauté in olive oil.

    Add the egg mixture and cook on the stovetop until the outside edges solidify. Place in the oven and bake until the center is firm.

  • 10

    Remove from the oven and invert onto a plate.
