OVERNIGHT GRAIN BOWL

WHAT YOU'LL NEED

  • 2 qt coconut milk, unsweetened
  • 1/2 cup raw barley
  • 1 1/3 cups raw oats
  • 1/3 cup and 2 TBSP raw bulgur
  • 3/4 cup and 2 TBSP maple syrup
  • 3 tsp vanilla extract
  • Salt to taste

How to Make

STEP ONE

The night before you want to eat the grain bowl, combine 1/2 of coconut milk, and remainder of ingredients in a large sauce pan. While stirring bring to boil.

STEP TWO

Turn off heat and let sit covered for 30 minutes.

STEP THREE

Add remaining coconut milk and refrigerate overnight.

STEP FOUR

Next morning stir the mixture. It should be thick and creamy.

STEP FIVE

If needed add small amount of coconut milk to thin.

STEP SIX

Place in bowl and top with fresh fruit, and toppings such as puffed quinoa, chia seeds, and local honey.

STEP SEVEN

For best quality and safety, eat within 3 days of preparation.
