Follow the Steps Below or Watch the Video Above
STEP 1

Fill pitcher with cold milk to the bottom of pour spout dent.

STEP 2

Aerate milk for about 3 seconds by keeping the tip of the wand near the surface of the milk. You should hear a paper-tearing sound.

STEP 3

Submerge wand toward bottom of pitcher to get milk to spin in a whirlpool motion. Make sure the wand is in the middle of the pitcher to help swirl the milk completely.

STEP 4

Heat milk to 150°F. Use a thermometer, or stop when you can’t touch the pitcher for more than an instant.

STEP 5

“Groom” the milk by tapping pitcher on counter and swirling gently by hand. This will pop any big bubbles and maintain microfoam.

STEP 6

Freely pour the milk into your freshly brewed espresso in a slow, steady stream above the center of the mug until it’s about half full, then stop.

Move the pitcher in a gentle circle to combine the milk and coffee.

STEP 7

Bring the pitcher down toward the mug and tilt the mug toward the pitcher, keeping the spout as close to the surface as possible.

Stream in the foam to create your first dot. Tilt the pitcher away to cleanly break the stream of milk.

STEP 8

Repeat the motion from the previous step 3 times.

Each time, you’ll pour another dot, pushing the new layer into the first. Gently tilt the mug back to center as you’re repeating the steps.

STEP 9

As you pour your last layer and the milk reaches the top of the cup, tilt the pitcher back to create a pencil-thin stream of milk.

Lower the mug slightly and pour the last bit of foam across the center of the mug, straight through the design, pulling the dot into a beautiful, stacked tulip.
