Coffee Glazed Ham

What You'll Need

  • For the rub:

  • ½ cup ground Starbucks(R) French Roast Coffee

  • ½ cup light brown sugar

  • 2 tablespoons kosher salt

  • For the glaze and ham:

  • 1 ½ cups brewed Starbucks(R) French Roast Coffee

  • 1 cup light brown sugar

  • 2 teaspoons finely ground fennel seed

  • 2 teaspoons coarsely ground black pepper

  • 1 12–14lb. cured, smoked, bone-in ham

How To Make

  • For the rub:

  • Combine coffee, light brown sugar and salt in a medium bowl. Using a sharp knife, score the ham in a crosshatch pattern, about ½” deep.

  • Place ham on a large roasting rack set inside a roasting pan. Add 1 cup water to the bottom of the pan (this will prevent any sugars burning). Rub coffee mixture all over ham, really packing it on there (it’s okay if some falls off). Place ham in oven and roast for about 20 minutes while you prepare the glaze.

  • For the glaze and ham:

  • Bring coffee, light brown sugar, fennel seed and black pepper to a simmer in a small pot. Simmer until all sugar is dissolved and glaze looks shiny, 5–8 minutes.

  • Using a pastry brush, brush ham with coffee mixture and roast, basting every 20 minutes with more of the coffee mixture as well as any pan juices, tenting with foil if browning too quickly, until an instant-read thermometer inserted into thickest part of ham registers 135°, 1½–2 hours.

  • Transfer ham to a cutting board and let rest 10 minutes before slicing. Serve with pan juices.
